Oatmeal cookies

On a cold morning like today — it’s 22 degrees right now here on Staten Island — hot cookies fit the bill. This is a riff on Quaker’s recipe. Use really good basic ingredients especially on the butter, vanilla and ground cinnamon and it will make all the difference.

 

Oatmeal Cookies My Way

2 cup(s) (1 stick) plus 7 tablespoons butter, softened — I use salted Kerry Gold

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

2 eggs

2 1/2 teaspoons vanilla — use a really good brand like Nielsen-Massey

1-1/2 cup(s) all-purpose flour

1 teaspoon(s) Baking Soda

1 1/2 teaspoon(s) ground cinnamon

1/4 teaspoon(s) salt — must use to bring out the best flavors in chocolate chips

3 cup(s) Quaker® Oats (quick or old fashioned, uncooked)

2 cups semi-sweet chocolate chips or any combination of the following white chocolate chips with macadamia, or white chocolate and cranberries

Cooking Instructions

Heat oven to 350 degrees. Cream butter and sugars. Add vanillIa, cinnamon, eggs. Toss in flour and baking soda; beat until combined. Beat in oatmeal and then chocolate chips or whatever you’re adding. Drop tablespoons of dough onto a cookie sheet preferably lined. Bake about 10 minutes until desired softness
